Creamy Tomato & Pepper Gnocchi Soup

This is almost as easy as heating a tin of Heinz tomato soup, but tastes 10X better (no shade to Heinz I love that stuff!).
There’s no chopping, it only takes about 10 minutes, only 5 ingredients, and it has such a gorgeous flavour.
There are a few key ingredients which make such a simple soup taste so good:
Jarred roast peppers - so sweet and flavourful
Nduja paste (or you could substitute for harissa or red pesto)
Cottage cheese - adds creaminess and protein (buy the full fat stuff, it makes a big difference)
Tomatoes wise, I recommend buying the best quality you can, I.e @muttipomodorouk which are 99.4% tomatoes and have such wonderful flavour (some of the cheaper tins are more like 60% tomatoes, and the rest tomato juice from concentrate).
The gnocchi is optional but I love a chunky soup and it makes this very filling and hearty enough to enjoy as a dinner.
