Miso Butter Chicken

Unsalted butter: 4 tbsp
White miso: 4 oz
Maple syrup: 3 tbsp
Rice vinegar: 1 tbsp
Black pepper: To taste
Bone in chicken thighs: 8
Garlic cloves: 8, smashed
Scallion : 1, finely sliced
Sesame seeds: 3 tsp

Preheat the oven to 400°F. Add the unsalted butter white miso maple syrup rice vinegar and black pepper to a mixing bowl. Stir well to combine. minimal_rich_text
Add the bone-in chicken thighs to the bowl and massage the miso-butter mixture into the meat. Make sure the marinade is rubbed under the skin for even distribution. Let marinate for 30 minutes. minimal_rich_text
Transfer the chicken to a roasting dish add the smashed garlic cloves and place into the oven. Roast for 30 minutes and baste the chicken twice during cooking. Once the skin is golden brown check the internal temperature of the meat using a thermometer. If it’s reached 165°F then it’s ready. minimal_rich_text
Sprinkle the chicken with the finely sliced scallion and sesame seeds. Serve immediately. minimal_rich_text
