Coconut Curry Chicken Satay with Peanut Sauce

1 tablespoon Curry Powder

2 teaspoon Fish Sauce

1/4 teaspoon Ground Black Pepper

1/4 cup Peanut Butter

1/4 cup Unsweetened Coconut Milk

2 tablespoon Honey

1 Lime

1 tablespoon Low-Sodium Soy Sauce

1 teaspoon Garlic

1/2 teaspoon Fresh Ginger

1/2 teaspoon Sriracha

1/4 cup Chopped Roasted Peanuts

to taste Salt

to taste Ground Black Pepper

If using wooden skewers, soak in water for at least 15 minutes before cooking.

To make the Peanut Sauce, add Peanut Butter (1/4 cup), Unsweetened Coconut Milk (1/4 cup), Low-Sodium Soy Sauce (1 Tbsp), Lime (1), Honey (2 Tbsp), Garlic (1 tsp), Fresh Ginger (1/2 tsp) and Sriracha (1/2 tsp) to a blender. Puree until smooth, about 30 seconds to 1 minute. Season with Salt (to taste) and Ground Black Pepper (to taste). Set aside or refrigerate until ready to serve.

To make Chicken Satay, slice each Chicken Breast (1.5 lb) into ¾ to 1-inch thick strips; I slice them with the grain, so it yields a longer piece. You should be able to get about four pieces per breast.

In a medium-sized bowl whisk together Unsweetened Coconut Milk (1/3 cup), Lime (1/2), Curry Powder (1 Tbsp), Fish Sauce (2 tsp), Honey (2 Tbsp), Olive Oil (1 Tbsp) and Garlic (1 tsp).

Add chicken slices, coat and allow to marinate at room temperature for at least 15 minutes. If you are not cooking within an hour, transfer chicken and marinade to a resealable plastic bag and refrigerate until ready to use.

Thread one piece of chicken on each skewer. Lightly season each side with Kosher Salt (1/2 tsp) and Ground Black Pepper (1/4 tsp). Set aside until ready to grill.

Heat the grill to medium heat. Add a small amount of Olive Oil (as needed) to a folded piece of paper towel, and then carefully grease the grill with the oil. Once the grill is nice and hot, add the marinated chicken skewers.

Cook chicken on each side until no longer pink (160-165 degrees F), about 4-5 minutes on each side, depending on the thickness of the chicken. Serve with peanut sauce and top with Chopped Roasted Peanuts (1/4 cup). Enjoy!
