Virginia’s Hot Dish

1 8oz package of dry egg noodles (medium or thin) tradition is to use thin.

2 Tbsp butter

1 lbs hamburger or ground turkey

1 clove of garlic

1 small onion (optional)

1 tsp salt & pepper

1 tsp sugar

2 8oz cans of tomato sauce

Mixture:

3oz package of cream cheese

1 cup sour cream

4-6 scallions

1/2 cup grated cheddar cheese

In a fry pan; brown hamburger, onion and garlic. Drain fat and add tomato sauce, sugar and salt & pepper. Cook noodle according to directions. In a baking dish, make 2 layers of; noodles, cheese mixture and meat sauce. Bake 20 minutes at 350 degrees.

This is a hit with everyone. The hot dish can be assembled and frozen for future meals.

The story behind Virginia’s Hot-dish from aunt Emily (Nana Marges’ sister): Virginia was a U of Minnesota graduate friend of your uncle Bob and aunt Dorothy. Your mom and dad and aunt Dorothy and Virginia would gather often on a Friday night for supper and parlor games. The evening began with sharing supper, which was usually Virginia’s casserole, and then the gaming of various sorts (most often ending in the craziness of a charade type game) would ensue. Lots of hilarity and fun shared with all. Roger and I were a part of those gatherings when we lived in St. Paul from 1965 to 1970.
