Honey Barbecue Chicken Salad

For the Chicken:

1 lb chicken breast, cut into bite-size pieces

1 tbsp olive oil

1 tsp onion powder

1 tsp chili powder

1 tsp Old Bay seasoning

1/2 tsp black pepper

1/4 cup sugar-free BBQ sauce

2 tsp honey

Salad:

4 cups romaine, chopped

1 avocado, cubed

1 cup cherry tomatoes, chopped

1/2 cup green onion

1/2 cup corn

2–3 tbsp cilantro

Salad Dressing:

1 cup non-fat Greek yogurt

2 tbsp red wine vinegar

2 tbsp Dijon mustard

2 tbsp water

1 tbsp honey

2–3 garlic cloves, minced

Squeeze of lemon

Salt & pepper, to taste

Cook the Chicken: Heat olive oil in a pan. Add chicken pieces, onion powder, chili powder, Old Bay seasoning, and black pepper. Cook until golden and fully cooked. Stir in BBQ sauce and honey, letting it caramelize slightly.

Prepare the Salad: In a large bowl, combine romaine, avocado, cherry tomatoes, green onion, corn, and cilantro.

Make the Dressing: Whisk together Greek yogurt, red wine vinegar, Dijon mustard, water, honey, garlic, lemon juice, salt, and pepper until smooth.

Assemble: Top the salad with warm honey BBQ chicken. Drizzle dressing over and toss gently to combine.

Tips

Grill the chicken instead of pan-frying for a smoky flavor.

Add crushed tortilla chips for extra crunch.
