Episode Ten: Libya 🇱🇾 (Mafrum)

4-5 big potatoes

1 kg ground beef of ground beef

1 onion, chopped finely

3 cauliflower florets

1 courgette (zucchini)

Handful of fresh parsley, chopped finely

2 eggs

1 ½ tbsp of breadcrumbs

1 tbsp black pepper

½ tsp salt

2 tsp cinnamon (optional)

500 grams plain flour

Tsp salt

3 eggs

3/4 cup water

Tsp salt

Tsp tomato puree

4-5 cauliflower florets

1 courgette (zucchini)

1 medium tomato

1 celery stalk, finely chopped

2 heapedtbsp tomato paste

Hot water filled up until covers the mafrums

Grate zucchini, cauliflower and onion. In a tea towel, squeeze out all of the liquid in the onion and courgette

Place beef in bowl with zucchini, cauliflower, onion, parsley, egg, salt, pepper, breadcrumbs and mix until well combined

Cut potatoes vertically, cut 3/4 of the way up, it should look like a sandwich… the thinner the better

Carefully place the meat mixture inside the potato sandwich and shape it off

Once finished, in a tray add flour and salt together. In another tray add tomato puree, eggs, salt and water… mix it well!

Heat up around 1/3 cup of neutral oil for frying, dip each mafrum in the flour and then in the tomato egg mixture and fry on each side until golden brown, you don’t want to fully cook them

In a separate pan, heat up a little oil and add tomato puree and sauté for 2 mins. After add zucchini, cauliflower, celery and grated tomato, fry for a few mins. Then add water, salt and pepper to taste, simmer and reduce for 45 mins

Add mafrums into the mixture and add more water until they are almost fully covered. Cover and cook for an hour and a half covered.
