Maple-balsamic Glazed Beets

for the beets:
4 beets, drizzled with olive oil & sprinkled with salt
roast them at 400F for 40-55 minutes, until tender.
let cool, peel and cut into 1” chunks.
for the glaze:
2tbsp balsamic
2tbsp maple syrup
2tbsp butter
sage leaves
black pepper & kosher salt

add to a skillet, turn on medium heat and cook until thick enough that it sticks to the back of a spoon.
toss the beets in the glaze to coat, and serve them with more fresh sage leaves.
