Peanut Aubergine

1 aubergine

2 tbsp smooth peanut butter

1 garlic clove

1/2 scotch bonnet (seeds removed if needed)

1 tsp fresh grated ginger

1 1/2 tbsp tamari

1 tbsp agave

1/2 squeeze lime juice

Cut the aubergines into thicker circles, lay on a baking tray and drizzle with evoo and sprinkle with sea salt.

Roast until they’re soft then remove from the oven. I seared them in a cast iron skillet to get a nice char but it’s not necessary.

Make the sauce by blending all the ingredients together until smooth.

Drizzle the sauce over the aubergine and top with crushed roasted peanuts, spring onions and fresh scotch bonnet.

Serve with rice.
