Cheese And Apple Scones

My sweet scones are always so popular and I’m always asked for a cheese version.
This can make 8 large or 16 mini scones.
I always add butter to my scones for the kids to take to school. You could even add lettuce, ham and cheese, a nice change from the sliced pan.

Cheese and Apple Scones-makes 8 large
400g plain flour
2 teaspoons baking powder
100g salted butter, at room temperature
200g grated cheddar cheese (or any cheese you like)
2 eating apples, peeled and diced small
2 eggs
140ml milk approx (depending on the mix you may need more or less!)
Optional add ins-2 tablespoons chopped fresh chives/spinach/parsley

Preheat the oven 180c fan. Line a baking tray with parchment paper.
Sieve the flour and baking powder into a mixing bowl, stir. Rub the butter into the flour with your fingertips until there are no big lumps. Stir in the cheese, apple and any chapped herbs/spinach if using.
Measure the milk and eggs into a jug, whisk well with a fork.
Pour in the milky egg mix bit by bit, you may not need it all. Bring the dough together with the fork. If it still seems dry add a bit more milk.
Tip the dough onto a floured work top. Gently knead until it’s smooth. Be very gentle, don’t overwork it. Dip the scone cutter in flour and shake off extra, cut out the scones, repeat until its all cut out.
Brush with any remaining egg-wash/or milk.
Bake for 20-25 minutes, they should be nicely golden all over.
Storage: Keep for 3 days in an airtight container
Freezer: Freeze in food safe bags for 3 months
Defrost: In an airtight container overnight
Lunchbox: Send to school with a flask of homemade soup. Slice scones in half and add butter if you like.
Lovely toasted with butter.
