Greek Horiatiki Salad

4 vine-ripened medium tomatoes (about 1¼ pounds)

1 English (hothouse) cucumber, partially peeled (in stripes)

1 green bell pepper, cored and seeded

1 medium red onion

A handful of pitted whole kalamata olives

Kosher salt

½ tablespoon dried oregano, plus more if you like

Extra-virgin olive oil

2 tablespoons red wine vinegar

1 block (about 6 ounces) high- quality Greek feta cheese

Crusty bread, for serving

1. Cut the tomatoes into wedges or large round slices- like to do some of both.

2. Cut the cucumber in half lengthwise, then slice crosswise into ½-inch-thick half-moons. Slice the bell pepper into rings. Cut the red onion in half and thinly slice crosswise into half-moons (see Tip).

3. Place the tomatoes, cucumber, bell pepper, and onion in a large salad dish or shallow bowl. Add the olives. Season lightly with salt (the olives add natural saltiness) and the oregano.

4. Pour about ¼ cup of olive oil and the vinegar over the salad. Give everything a gentle toss to mix (do not overmix; this salad is not meant to be handled too much).

5. Break the feta into smaller blocks and arrange them on top of the salad. Add a sprinkle more of oregano, if desired. Serve with the crusty bread, if you like.

备注

TIP To tone down the harsh taste of the onion, you can put the slices in a bowl and cover with ice water and a bit of red wine vinegar to soak for 5 minutes or so. Drain before using in the salad
