Peanut Butter Curry

11 oz Thai Style Red Curry Sauce

1 can coconut milk, full fat

1 can chickpeas, drained

2-3 cups baby spinach, washed

1/2 cup cilantro, chopped

1/3 cup peanut butter

Toppings: chili crisp, cilantro,

Optional: serve with rice

步骤

Add curry paste to a skillet over medium heat, along with chickpeas, coconut milk and cilantro. Stir, and bring to a simmer, let cook for 2-3 minutes.

Add spinach to pot and let wilt, cover with a lid and let cook for about 5 minutes on low heat, stirring occasionally. Remove lid and add peanut butter. Stir again and let cook for 5-7 more minutes until sauce thickens up.

Serve with chili crisp and cilantro 🌿
