Red Lentil Soup

2 tbsp olive oil

1 medium onion, chopped

3 cloves garlic, minced

1 carrot, peeled and chopped

1 small potato, peeled and chopped

1 cup red lentils, rinsed

1–2 tbsp tomato paste

1 tsp sweet paprika

½ tsp turmeric

¼–½ tsp chili flakes (to taste)

½ tsp black pepper

1 bay leaf

7 cups water or vegetable broth

Salt, to taste

Juice of ½–1 lemon

To finish (optional):

Chopped fresh parsley

Extra olive oil or chili oil

Heat olive oil in a pot over medium heat.

Add onion and cook until soft and lightly golden.

Add garlic and tomato paste.

Cook 1–2 minutes until fragrant and slightly darkened.

Stir in paprika, turmeric, chili flakes, black pepper, and bay leaf.

Add carrot, potato, red lentils, and water or broth.

Season with salt.

Bring to a boil, then lower heat and simmer 20–25 minutes, until everything is very soft.

Remove bay leaf.

Blend to your liking:

Fully blended → smooth, creamy, classic

Rough blend → creamy with texture (highly recommended)

Stir in lemon juice. Taste and adjust salt or lemon.

Serve warm, garnished with parsley and a drizzle of olive oil.
