Dumpling Bake

What you'll need: * 1 bag any frozen dumplings, shrimp, chicken, beef (about 16 pcs) * 1 can coconut milk * 3 tbsp green curry paste * 3 cloves garlic, minced * 2 tsp ginger, grated * 2 tbsp light soy sauce * 1 tbsp brown sugar * 2 tsp rice vinegar or lime juice * 2 cups spinach * toppings: sliced green onions, cilantro, sesame seeds, chili crisp

Make it:
1. Preheat oven to 375°F
2. In a baking dish, whisk together coconut milk, curry paste, garlic, ginger, soy sauce, brown sugar, and rice vinegar.
3. Scatter the spinach evenly into the dish. Place the frozen dumplings in a single layer on top.
4. Cover tightly with foil and bake for 25-30 minutes, until the dumplings are cooked through and the sauce is bubbling.
5. Uncover and finish with green onions, cilantro and a drizzle of chili oil. Serve as-is or with steamed rice.
