Beef Stir-fry Noodles Recipe

For the noodles:
8 oz (225 g) lo mein noodles or rice noodles
1 tbsp sesame oil
For the beef:
1 lb (450 g) flank steak or sirloin, thinly sliced
1 tbsp soy sauce
1 tsp cornstarch
1 tsp sesame oil
1 tsp minced garlic
For the stir-fry:
1 red bell pepper, sliced
1 carrot, julienned
2 cups bok choy or broccoli
3 green onions, sliced (save some for garnish)
2 tbsp vegetable oil
For the sauce:
3 tbsp soy sauce
2 tbsp oyster sauce
1 tbsp hoisin sauce
1 tbsp brown sugar
1 tsp chili sauce (optional for spice)
1/2 tsp ground black pepper
1/4 cup water

Cook the noodles:
Boil noodles according to package directions. Drain, rinse with cold water, and toss with 1 tbsp sesame oil. Set aside.
Marinate the beef:
In a bowl, mix beef with soy sauce, cornstarch, sesame oil, and minced garlic. Let sit for 10–15 minutes.
Make the sauce:
In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, brown sugar, chili sauce (if using), pepper, and water.
Cook the beef:
Heat 1 tbsp of vegetable oil in a large pan or wok over high heat. Add beef and stir-fry for 2–3 minutes until browned. Remove and set aside.
Cook the vegetables:
Add another 1 tbsp oil. Toss in bell pepper, carrot, and bok choy/broccoli. Stir-fry for 2–3 minutes until tender-crisp.
Combine everything:
Return beef to the pan, add cooked noodles and sauce. Toss well until evenly coated and heated through (2–3 minutes).
Garnish and serve:
Top with sliced green onions and sesame seeds. Serve hot!
