Hot Honey Feta Crispy Chicken Pesto Linguine

55g PRO, 74g CHO, 12g FAT
120g of uncooked chicken breast
5g of flour
1 egg white
15g of panko breadcrumbs mixed with 1 tsp of paprika & garlic powder
Oil spray
60g of uncooked linguine (save pasta water)
2 cloves of garlic, minced
4-5 cherry tomatoes, halved
15g of reduced fat pesto
25g of light cream cheese
200ml of pasta water (and more if needed)
1/2 chicken stock cube
Salt/pepper
Chilli flakes, optional
20g of feta, crumbled
10g of hot honey
Fresh parsley, chopped

Beat down the chicken breast. Dip into the flour, then coat in the egg white and then the breadcrumbs. Spray with oil and air fry at 180°C for 15-20 minutes.
Cook and boil pasta for 8-10 minutes until al dente. Save the pasta water.
Spray a pan with oil on medium heat. Add the garlic and tomatoes with a dash of water. Let the tomatoes cook and blister. Press down with the spatula to release all the juices.
Mix in the cream cheese, pesto, 200ml of pasta water and crumble in the chicken stock cube. Let this come to a boil and reduce the heat to simmer.
Add in the linguine, let more paste water fall in and mix through the sauce. Season with salt/pepper. Add chilli flakes (optional).
Serve the linguine with the crispy chicken. Top with some more chilli flakes (optional), crumbled feta, a drizzle of hot honey and some parsley.
