Apple Pecan Cake

2 cups of apples (diced)

1/4 cup of brown sugar

1 tsp of cinnamon

1 tsp of nutmeg

3/4 cup of unsalted butter (softened)

1 cup of granulated sugar

3 large eggs

1 tbsp of vanilla extract

1/3 cup of buttermilk / sour cream

1 1/2 cups of all purpose flour

1 tsp of baking powder

1 tsp of cinnamon

Pinch of salt

Pecan Topping:

3/4 cup of pecans (chopped)

3 tbsp of butter (melted)

3 tbsp of flour

3 tbsp of brown sugar

1 tsp of cinnamon

步骤

Preheat oven to 350 F.

In a large bowl blend butter for 1 minute.

Add sugar and blend again for another 2 minutes.

Add eggs, one at a time, blending in between.

Add vanilla and buttermilk. Blend until just incorporated.

In a separate bowl add dry ingredients- flour, baking powder, cinnamon, and salt.

Slowly add dry ingredients into the wet. Do not over blend.

In a small bowl, add apples, brown sugar, cinnamon, and nutmeg. Mix into the batter.

Transfer to a well greased 9 inch springform pan.

Combine ingredients for pecan topping in another small bowl; and sprinkle over top the batter.

Bake for 60-65 minutes.
