Garlic Cheese Bread

Dough

1 cup warm milk (200 ml)

1 tsp sugar

1 tsp dry yeast (or ½ fresh yeast)

2 tbsp olive oil

About 2½ cups flour

1 tsp salt

Garlic Mixture

1 whole head garlic (large preferred)

3–4 tbsp olive oil

2 tbsp softened butter

Salt

Black pepper

Red pepper flakes

A small handful finely chopped parsley

Shredded kashar cheese (mozzarella used here)

Knead all dough ingredients together, adding the flour gradually to form a soft dough. Let it rise until doubled in size.

Peel the garlic and sauté in olive oil over a pan, stirring constantly as it cooks quickly. Let cool slightly.

Mash the garlic and mix with butter, seasonings, parsley, and olive oil.

Divide the risen dough into 3 pieces and shape each into a long flatbread.

Place on a baking tray, spread the garlic mixture evenly over each piece, and generously sprinkle with cheese. Add extra red pepper flakes if desired.

Bake in a well-preheated oven at 230°C (450°F) for 15–20 minutes until golden and bubbly. Serve hot 🤌
