Roasted Cauliflower

INGREDIENTS
2 heads cauliflower
1 tbsp smoky paprika
1 tsp garlic powder
1/2 tsp onion powder
1.5 tsp salt
Freshly ground
6 tbsp extra virgin olive oil

DIRECTIONS
1. Remove cauliflower leaves. Slice cauliflower (like you'd slice bread) into 1/4" slices. Wash and dry very well (I let it dry on a kitchen towel, sometimes overnight if I am organized)
3. Place cauliflower onto a metal baking sheet. Toss with oil and spices.
4. Spread cauliflower in a single layer on a baking sheet - you will probably need to separate it
5. Roast for about 40 minutes (without tossing in the pan) until beautifully caramelized. Don't put it into the fridge - eat straight off the pan!
