Spicy Yum Yum Shrimp Boats

This combo is as EASY as it gets, and so good! It’s the perfect light meal for an easy lunch or dinner, and can even be a snack depending on your own fitness goals. It’s got a little bit of crunch, creamy, spicy, and salty in each bite. This is one of the sauces in my cookbook Shredhappens: So Easy, So Good. For the rice, you can use whatever you prefer - brown, white, or quinoa works great. And if you’re hight protein or lowcarb, my Kaizen lowcarb rice is a great option!

Here’s how I made it:

1.First, the protein. I used 1 wild shrimp, but you can use chicken or any other protein you like. Just pat the shrimp dry and season with 1 tsp oil, salt, pepper, 1 tsp paprika, 1 tsp onion powder, & 1 tsp oregano. Let it sit for a couple minutes, or make it right away.

2.Bring a pan to medium-high heat. And cook the shrimp for 60-90 secs on each side, you dont want to over cook it.

3.Make your favorite rice, or use leftovers. To add some flavor here, I stirred in 2 tbsp rice vinegar & 1/2 tsp powdered monk fruit to give it that sushi rice vibe, but thats optional. You dont need to season your rice.

4.Cut a large English cucumber in half & scoop out the middle. You can also use smaller persian cucumbers here too, your call.

5.Add some spoonfuls of your cooked rice, then top it up with your favorite toppings. I cubed up some avocado, added a few shrimp,an some jalapeno and scallions here. Use however much or little of each as you like.

6.then, the best part! Drizzle on some spicy mayo or make this amazing Spicy Yum Yum sauce from my shredhappens cookbook (page 201!). This makes a big batch: 1/2 to 1 cup mayo, 1 tbsp sriracha, 1/2 tbsp gochujang, 1 tbsp rice vinegar, 1 tsp monk fruit or sugar, 2 tsp garlic powder, a splash of rice vinegar (or mirin) and a touch of cayenne and salt to taste. Drizzle however much or little you want.

7.Top it all off with everything bagel seasoning, some furikake, a splash or two of soy sauce, and enjoy!
