Vegan Chili

4 cups vegetable broth or tomato/vegetable juice

1 cup shiitake mushrooms, minced

1/2 cup lentils, uncooked

1 cup black beans, uncooked

1 cup sweet potatoes, diced

1/4 cup chipotle peppers, pureed

1 tsp cumin

1 1/2 tsp chili powder

1/2 tsp smoked paprika

1 tsp oregano, crumbled

Salt to taste

Pepper to taste

2 or 3 cloves garlic, minced

1 green bell pepper, diced

1 jalapeño, minced

1 onion, diced

1 cup tomatoes, diced

A few tablespoons cilantro, chopped

Cover black beans with water and soak overnight. Next day, rinse and cover in water again with lentils in a large pot.

Bring to a boil and lower to a simmer, adding more water as needed until cooked. Drain the boiling water off, add everything else, and simmer for 30 minutes, adjusting seasonings and liquid level as needed.

If you want to, you can sauté the garlic, onion, bell pepper, and sweet potatoes in a little oil until browned before throwing them in the pot.
