Grissini Sticks!

3 g dry yeast
10 g honey or malt syrup
145 g warm water (about 90°F / 32°C)
4 ½ g fine salt
7 g fruity extra virgin olive oil (Sicilian or Ligurian)
250 g organic all-purpose flour
Semolina flour, for dusting

Bloom the yeast:
Combine yeast, malt syrup (or honey), and warm water in the mixer bowl. Let stand 10 minutes, until foamy.
Add oil and salt, then gradually mix in the flour using a dough hook. Mix until dough comes together and cleans the bowl — firm, smooth, and elastic.
Knead by hand for 3–5 minutes until supple.
First rise:
Place in a clean (unoiled) bowl, cover with plastic wrap, and let rise until doubled — about 1 hour at room temperature.
Shape:
Flatten gently into a rectangle, cut into strips, with a round wheel cutter and roll into pencil-thin sticks.
Dry proof:
Rest uncovered on a semolina-dusted baking sheet for 10–15 minutes.
Bake:
Bake at 375°F (190°C) for 20–22 minutes, until golden and crisp.
