Manti-inspired Turkish Pasta

1 cup (100g) short pasta (macaroni, bowtie, penne, or any preferred shape)
250 g minced beef (or lamb)
1 onion, finely chopped
1 tsp paprika
1 tsp curry powder
1/2 tsp salt
1 cup (240g) Greek yogurt
1 clove garlic, minced
1/4 tsp salt
3 tbsp (42g) butter (or olive oil)
1 tsp paprika
1/2 cup (75g) cherry tomatoes, chopped
2 tbsp fresh parsley or cilantro, chopped

Make the Garlic Yoghurt Sauce
Mix yogurt with minced garlic and a pinch of salt. Let it sit to meld the flavours while you cook everything else.
Prepare the Spiced Beef Topping
Heat a skillet over medium heat. There is no need to add oil. Add the minced meat, breaking it up with a spoon. Cook until all the liquid is released and cooks off. Option to soak up excess grease with a paper towel.
Add chopped onions next, along with paprika, curry powder and salt. Sauté until softened, and the beef has browned, about 3-4 minutes. Set aside.
Cook the Pasta
Bring a pot of salted water to a boil. Add the pasta and cook until al dente according to package instructions. Drain and set aside.NOTE: The pasta and beef can be cooked at the same time!
Making the Paprika Butter
In a small saucepan, melt the butter over low heat.
Stir in paprika and heat gently for 30 seconds until aromatic, or when butter starts bubbling and has taken on a reddish hue. Remove from heat.
Assemble and Serve
In serving bowls, layer the cooked pasta, yogurt sauce, and spiced beef. Drizzle with paprika butter, then top with cherry tomatoes and fresh parsley or cilantro.
Serve immediately while warm. Mix everything together to enjoy a perfect bite of creamy, spiced, and fresh flavours!
