1 tbsp olive oil

1 lb lean ground beef

1 small onion, diced

1/2 green bell pepper, diced (optional)

2–3 cloves garlic, minced

8 oz can tomato sauce

1/2 cup ketchup

1–2 tbsp brown sugar

1 tbsp Worcestershire sauce

1 tsp yellow mustard

1 tsp apple cider vinegar

1/2 tsp kosher salt

1/4 tsp black pepper

Sauté aromatics: Heat olive oil in a large skillet over medium-high heat. Add the diced onion and bell pepper (if using) and cook until tender, about 5–7 minutes.

Brown the beef: Add the ground beef to the skillet, breaking it apart with a wooden spoon. Cook until it is browned and no longer pink. Drain any excess grease from the pan.

Add garlic: Add the minced garlic to the skillet and cook for another minute until fragrant.

Prepare the sauce: In a small bowl, whisk together the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, and apple cider vinegar.

Simmer: Pour the sauce over the beef mixture in the skillet and stir to combine. Bring the mixture to a simmer. Reduce the heat to low, cover, and let it simmer for 10–15 minutes, or until the sauce has thickened.

Season and serve: Stir in salt and pepper, tasting and adjusting seasoning as needed. For extra flavor and texture, butter and toast the hamburger buns before serving. Spoon the sloppy joe mixture generously onto the buns.

Prevent soggy buns: To keep your buns from getting too soggy, toast them lightly under the broiler or in a separate skillet with a little butter.

Adjust flavors: Adjust the sauce to your liking. For more tanginess, add a splash more of apple cider vinegar or mustard. For extra sweetness, add more brown sugar.

Add spice: Add a dash of hot sauce, a pinch of red pepper flakes, or chili powder for a spicy kick.

Slow cooker method: After browning the meat and sautéing the vegetables, transfer everything to a slow cooker. Cook on low for 4–6 hours or on high for 2–3 hours for a hands-off meal.
