Ingredients: I took one of the best cuts of steak.. a ribeye cap and butterflied it. Pounded it down to get an even thickness.; Made a pistachio basil pesto for the stuffing. Rolled it together, tied it and cut it into steaks.; Grilled on the flattop with some beef tallow and it blew my mind!! The flavor was incredible and so incredibly tender.; It’s tough to find these ribeye caps but @haltemanfamilymeats always comes through.
