Pistachio steak pinwheels

I took one of the best cuts of steak.. a ribeye cap and butterflied it. Pounded it down to get an even thickness.

Made a pistachio basil pesto for the stuffing. Rolled it together, tied it and cut it into steaks.

Grilled on the flattop with some beef tallow and it blew my mind!! The flavor was incredible and so incredibly tender.

It’s tough to find these ribeye caps but @haltemanfamilymeats always comes through.
