A comforting, nourishing curry packed with roasted cauliflower, chickpeas & red lentils, perfect with warm roti or a bowl of fluffy rice 🍛✨

Roasted Cauliflower, Chickpea & Red Lentil Curry

Red Lentils

1 cup red lentils, soaked for 2 hours

3 cups water

Thumb-sized fresh turmeric or 1/4 tsp turmeric powder

3 cloves garlic

1 tbsp oil

1/2 tsp salt

Cook for 20 minutes, or until soft.

Roasted Cauliflower & Carrots

1 medium cauliflower, cut into florets

1 carrot, sliced

1 tbsp oil

Salt and pepper, to taste

Roast at 200°C for 20–25 minutes.

Blend ginger paste Ingredients:

10g ginger

1 onion

3 tbsp water

Sautéed Ingredients

1 onion, sliced

2 sprigs curry leaves

2 tomatoes, chopped

1–2 fresh red chilies

1–2 fresh green chilies

1–2 tbsp chili powder

Tamarind Mixture

1 tbsp tamarind

1/4 cup water

Dry chili
