8 oz pepper jack cheese, shredded or sliced (deli-fresh)

¼ tsp kosher salt

¼ tsp onion powder

½ tsp chili powder

½ tsp garlic powder

½ cup roasted green chilies (1 small can)

Diced tomatoes

Sliced jalapeños

In a saucepan, heat the half and half with salt, onion powder, chili powder, and garlic powder over medium heat, stirring often, until hot but not boiling.

Reduce heat to medium-low. Add the cheeses gradually, stirring constantly until fully melted and smooth.

Stir in the roasted green chilies and cook 2–3 minutes until combined.

Serve warm with tortilla chips, or use as a topping for nachos, tacos, or burrito bowls.
