Boursin Shrimp Asparagus Tortellini

20 oz refrigerated cheese tortellini

1 lb raw shrimp, peeled & deveined

6 oz asparagus, cut into 2-inch pieces

1 Boursin Garlic & Fine Herbs

1 1/2 cup vegetable broth

1/2 cup Parmesan, freshly grated (plus more to serve)

2 tbsp olive oil

1 tsp TJ’s Aglio e Olio seasoning

1 pinch salt & black pepper

Toss raw shrimp, peeled and deveined with 2 tbsp olive oil and TJ’s Aglio e Olio seasoning. Heat a large skillet over medium high. Sear shrimp 1 - 2 min per side until pink. Remove to a plate.

In the same pan over medium heat, add asparagus and sauté for about 2 minutes until just starting to soften. Add refrigerated cheese tortellini to the pan in a single layer, then add the Boursin and pour in the broth. Stir gently to combine. Cover and cook over medium heat for 3 - 4 minutes, stirring once halfway through, until tortellini is tender and sauce is creamy.

Stir in Parmesan and season with

salt and black pepper. Add the shrimp back in and let everything warm through for 1 minute.
