Crust
9 sheets Phyllo dough (about a third of a frozen roll)
1 egg white
1 1/2 tablespoon water
2 tablespoons olive oil, divided
200 g (roughly) Parmesan, grated
3 cloves garlic, minced
Toppings
200 g pesto
100 g (roughly) feta, crumbled
100 g (roughly) Parmesan, grated
1/2 tomato, sliced
1/4 onion (red or white), sliced
1 small yellow potato (optional)
Salt
Pepper
Red pepper flakes

For the crust
Combine the egg white, water, 1 tablespoon oil in a bowl with a pinch of salt, pepper, and red pepper flakes.
Lay a sheet of Phyllo on a baking sheet, brush lightly with the egg/water/oil mixture, sprinkle with Parmesan and minced garlic. Repeat so you have 7-10 layers.
Don’t brush the last layer.
Bake for 8 minutes at 375°F.
While the crust is cooking, prep your toppings.
Chop the potato into 1 cm squares and steam in the microwave until just fork tender. Slice the onion and tomato.
Take the Phyllo out of the oven. At this point, you can really top it with whatever you want.
If you use an oil-based sauce like pesto, don’t oil the top sheet; just put the sauce directly on the crust. If you use red sauce or something else (or omit the sauce completely), brush the top with about 1 tablespoon olive oil.
Top with pesto, feta, Parmesan, more garlic, onion, tomato, potato (optionally), pepper, and red pepper.
Bake for another 10-15 minutes.
