This Flourless Apple Cinnamon Carrot Cake

For the Cake:
1 cup (100g) grated apple (about 1 medium apple)
1 cup (100g) grated carrot
1 ½ cups (150g) almond flour
2 tbsp ground flaxseeds
⅓ cup (80ml) maple syrup or honey
2 large eggs (or flax eggs for vegan option)
¼ cup (60g) Greek yogurt (or dairy-free yogurt)
1 tsp vanilla extract
1 tsp baking powder
1 tsp cinnamon
¼ tsp nutmeg
1 tbsp lemon juice
½ cup (50g) chopped walnuts or pecans (optional)

Preheat & Prep:
Preheat oven to 350°F (175°C).
Grease and line a 9-inch (23cm) round cake pan with parchment paper.
Mix Dry Ingredients:
In a bowl, whisk together almond flour, flaxseeds, baking powder, cinnamon, and nutmeg.
Mix Wet Ingredients:
In another bowl, whisk eggs, maple syrup, Greek yogurt, vanilla extract, and lemon juice until smooth.
Combine & Bake:
Stir the grated apple and carrot into the wet mixture.
Gradually add the dry ingredients and mix until combined.
Fold in walnuts or pecans (if using).
Pour the batter into the pan and smooth the top.
Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
Cool & Serve:
Let cool before slicing. Enjoy as is or with a light drizzle of honey! 🍯
