Wine & Dip Episode 2: Hot Honey Whipped Feta

8oz (ish) of creamy Macedonian feta + 1-2 tbsp brine or milk (Calgary peeps you can get this at the incredible Kalamata Grocery on 11st downtown!)

2-3 tablespoons honey

½ tablespoon @sevenspiceltd Chili Oil (I used the actual chilis and less of the oil) **NOTE you can also just buy hot honey, or infuse your own honey with red chili flakes!

a handful of salted, roasted pistachios to garnish

Fresh pita or pita chips to serve

Whip the feta either by hand with a whisk or in a food processor. You may need to add 1-2 tbsp of the brine or some milk to get it to the perfect creamy consistency!

Mix together your hot honey and then microwave for ~15-20 seconds. Drizzle over the feta.

Top with crushed salted/roasted pistachios and serve with fresh pita or pita chips!

Why the pairing works🌟

Off-dry means “a hint of sweet”. That sweetness will match the sweetness from the honey and help temper some of that spice!

The saltiness from the feta amps up all those awesome fruit flavours in the wine

The wines high acidity cleanses the palate between each creamy bite!
