1 large chicken (spatchcocked)
For the fajita spices (1 teaspoon of each):
Dried oregano
Ground cumin
Cinnamon
Garlic granules
Chillli flakes
Smoked paprika
Salt
Pepper
Dried coriander
Tomato paste
How I make it:

Start by spatchcocking your chicken so we can cook it much quicker. Cut up your vegetables (peppers and onions and garlic) and add to a roasting dish. Mix together oregano, smoked paprika, cumin, cinnamon, coriander, garlic granules, salt, chilli flakes and olive oil. Cover all over the chicken and add some to the vegetables and mix. If it’s dry add a splash of water . Roast in the oven at 220 Celsius for 30 mins then reduce to 180 for 20 (or until it reads 70 degrees internally). Slice it up and serve in warmed tortillas with whatever you want, I opted for the avocado.
The pickled shallot is shallot with mirin, splash of water, sugar and salt.
