Cranberry Walnut Chickpea Salad with Orange Vinaigrette

For the salad
1 can Chickpeas, drained & rinsed
½ cup dried Cranberries
½ cup chopped Walnuts (lightly toasted if possible)
1 cup cucumber, diced
1 cup bell pepper, diced
¼ red onion, finely chopped
2 cups spinach or mixed greens
Optional: feta cheese or avocado
For the orange vinaigrette
¼ cup fresh orange juice
2 tbsp olive oil
1 tsp Dijon mustard
1 tsp honey or maple syrup
1 small garlic clove, grated (optional)
Salt & black pepper to taste

Prep the base
In a large bowl, combine chickpeas, cranberries, walnuts, cucumber, bell pepper, onion, and greens.
Make the dressing
Whisk together orange juice, olive oil, Dijon mustard, honey, garlic (if using), salt, and pepper until smooth and slightly emulsified.
Assemble
Pour the orange vinaigrette over the salad and toss gently until everything is well coated.
Rest & serve
Let it sit for 5–10 minutes so the flavors blend, then serve.
