Recipe: Biscoff Key Lime Pie Bars

Tangy, creamy, and sitting on a dreamy Biscoff-graham crust.

CRUST 24 Biscoff cookies | 8 graham crackers | 8 tbsp melted butter

FILLING 6 egg yolks (room temp) | 1 can sweetened condensed milk | ⅔ cup key lime juice | 2 tsp lime zest | pinch of salt

MASCARPONE WHIP 4 oz mascarpone | ½ cup powdered sugar | 1¼ cup heavy cream | lime zest to garnish

步驟

Preheat oven to 350°F. Line a 9x9 pan with parchment.

In food processor, blitz cookies + crackers into fine crumbs. Stream in melted butter, pulse until sandy. Press into pan, bake 10 min. Cool.

Beat egg yolks on high 3 min until pale yellow. Add condensed milk, beat until fluffy. Fold in lime juice, zest + salt. Pour over crust, bake 12–15 min until mostly set. Cool, then fridge 3+ hrs.

Beat mascarpone + powdered sugar until creamy. Add heavy cream, beat to stiff peaks — don’t overmix ⚠️.

Spread whip over bars, chill one hour, slice & garnish with zest. Enjoy! 💚
