4 egg yolks

4 egg whites

2 scallions (whites and greens separated and thinly sliced)

3 cloves garlic (minced)

1 Chinese sausage (diced)

2 cups day-old rice

½ tsp salt

¼ tsp white pepper

1 tsp sesame oil

Optional: extra scallions

步驟

Combine rice with egg yolks, salt, white pepper, and sesame oil until all grains are coated.

Heat oil in a pan and sauté garlic and scallion whites for 2 minutes.

Add sausage and cook another 2 minutes. Push everything to the side.

Pour in egg whites and scramble, then mix everything together.

Add rice mixture and stir-fry for 2 minutes over high heat.

Finish with scallion greens and serve hot.
