Thai Lemongrass Chicken Skewers

Juicy chicken marinated with lemongrass, garlic, and Thai spices, then grilled to perfection. Perfect as an appetizer or main dish!
Ingredients (4 servings / 12 skewers)
For the Chicken Skewers 🍗
500 g (1 lb) chicken breast or thigh, cut into bite-sized cubes
2 stalks lemongrass 🌿, tender white parts finely minced
3 cloves garlic 🧄, minced
1 tbsp fresh ginger 🌱, grated
2 tbsp soy sauce 🌸
1 tbsp fish sauce 🐟
1 tbsp brown sugar or honey 🍯
1 tsp chili flakes 🌶️ (optional for heat)
2 tbsp vegetable oil 🌿
Bamboo or metal skewers
For Garnish & Serving 🌿
Fresh cilantro or Thai basil 🌱
Lime wedges 🍋
Sweet chili sauce 🌶️🍯 (optional dipping sauce)

Prepare the Marinade 🌿
In a bowl, mix minced lemongrass, garlic, ginger, soy sauce, fish sauce, brown sugar, chili flakes, and vegetable oil.
Add chicken cubes and toss to coat evenly.
Cover and refrigerate at least 30 minutes (or up to 2 hours) to marinate.
Assemble the Skewers 🍢
Thread marinated chicken onto skewers evenly.
If using bamboo skewers, soak them in water 20–30 minutes to prevent burning.
Cook the Skewers 🔥
Option 1: Grill
Preheat grill to medium-high heat.
Grill skewers 3–4 minutes per side until cooked through and lightly charred.
Option 2: Broil / Oven
Preheat oven broiler.
Place skewers on a lined baking sheet and broil 4–5 minutes per side until cooked through and lightly browned.
Serve 🌿🍋
Arrange skewers on a platter.
Garnish with fresh cilantro or Thai basil and lime wedges.
Serve with steamed jasmine rice 🍚, cucumber salad 🥒, or sweet chili dipping sauce 🌶️🍯.
Tips & Variations
Add bell pepper, red onion, or pineapple chunks 🍍 to the skewers for extra color and flavor.
For a smoky flavor, cook on a charcoal grill if possible.
Double the marinade ingredients for extra juicy and flavorful chicken.
