1 cup sugar
1/3 cup oil
2 tsp vanilla
2 1/4 cups all purpose flour
2 tsp baking powder
1 ½ cups crushed cornflakes

40 whole almonds - approximately
¼ tsp cinnamon
1 tbsp sugar

Combine eggs, sugar, oil and vanilla until well mixed.
Add flour, baking powder and cornflakes and mix just until all combined. If too wet add a little more flour.
Form into 2 logs about 12” long and 3” wide on a large baking sheet covered with parchment paper. Place an almond on both sides of logs about 1” apart.
Combine cinnamon and sugar and sprinkle over top. Bake at 350 F for 30 minutes.
Let cool for 5 minutes, then slice into 1” slices, turn on their side and bake for another 30 minutes or just until browned. Let cool to crisp up. Enjoy!
