I Don’t Usually Make the Same Dessert for Shabbat for a Few

1/2 cup oil
1/4 cup white sugar
3/4 cup brown sugar
1 egg
1 tsp vanilla
1 1/4 cup oats
1 cup flour
1/2 tsp baking soda
2 tbsp cornstarch
1/2 tsp salt
1 tsp cinnamon
3/4 cup chopped semisweet chocolate
2/3 cup chopped pecans
1/4 cup unsweetened shredded coconut
Maldon salt or flaked sea salt

Preheat oven to 350°F.
Whisk together oil, sugars, egg and vanilla.
Add in oats, flour, baking soda, cornstarch, salt and cinnamon. Combine.
Fold in chocolate, pecans and coconut. Spread on a lined baking sheet.
If there are any toppings remaining in the bowl, just add them on top of the cookie.
Sprinkle on some salt.
Bake for 20-22 minutes.
Allow to cool slightly, slice and enjoy!
