Chimichurri Jumbo Shrimp

1 lb 8/12 ct Black Tiger shrimp, butterflied
1/4 cup olive oil
2 garlic cloves, crushed
1/2 tsp salt
1/2 tsp paprika
1/2 tsp chipotle powder
Black pepper
Lemon zest
Chili flakes, optional
Chimichurri sauce:
1/4cup parsley, packed
1/4 cup cilantro, packed
1 Fresno chile, optional (I didn’t have one today😉)
1/4 cup olive oil
2 garlic cloves, crushed
1 tbs red wine vinegar
2 tsp honey
1 lime, juiced and zested
1/2 tsp salt
1/2 tsp oregano
步驟
Butterfly shrimp and pat dry really well (this shrimp comes peeled and de-vein);
Season shrimp with olive oil, salt, pepper, paprika, chipotle powder, garlic and lemon zest; let marinate while making your chimichurri;
To make the chimichurri, add all ingredients above to a food processor and give it a blitz;
Cook shrimp in a skillet over medium- high heat for about 1-2 minutes per side, depending on size;
Once shrimp has cooked, drizzle chimichirri generously and enjoy!
