Chili Bean Salsa Salad

When the salad makes you do a happy dance!

Totally made mostly with canned beans and veggies, this is an awesome salad when you want a party food! Even if it’s just for a dinner or lunch!

For the Salsa Dressing:

1 cup canned diced tomatoes with juice

2 avocados

1/4 cup oil

Zest of one lime and lemon with juices

Handful of fresh @kosher_taste parsley

3 cloves @kosher_taste garlic cloves

Salt and pepper to taste

Pinch of crushed red pepper

1 tsp. Smoked paprika

For the Salad :

1 can butter beans or white beans , drain and rinse

1 can black or red beans, drain and rinse

1 can chickpeas, drain and rinse

1 can corn niblets, drain and rinse

1 small red onion, diced small

2-3 small Persian cucumbers, diced

Handful cherry tomatoes, diced

Feta for garnish

For the dressing:

Blend everything in a processor till smooth

For the salad:

Add everything to a big bowl and mix well. Pour the dressing over the salad and garnish with feta.

Eat with chips
