Slow Cooker Cajun Jambalaya with Chicken, Sausage & Shrimp

450 g chicken breast or thighs, cut into cubes
225 g smoked sausage (like andouille), sliced
250 g raw shrimp, peeled & deveined
1 onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
2 celery stalks, diced
4 cloves garlic, minced
1 can (400 g) diced tomatoes
3 cups chicken broth
1 ½ cups long-grain rice (uncooked)
2–3 tbsp Cajun seasoning (to taste)
1 tsp smoked paprika
½ tsp thyme
1–2 bay leaves
Salt & pepper, to taste
Fresh parsley, chopped (for garnish)
Hot sauce (optional, for serving)
步驟
Layer ingredients: In the slow cooker, add chicken, sausage, onion, peppers, celery, garlic, tomatoes, broth, rice, Cajun seasoning, paprika, thyme, bay leaves, salt & pepper. Stir to combine.
Cook: Cover and cook on Low 6–7 hours or High 3–4 hours, until rice is tender and chicken is cooked.
Add shrimp: In the last 20 minutes, stir in shrimp. Cover again until pink and cooked through.
Finish: Remove bay leaves, stir well, and garnish with fresh parsley.
Serve: With a dash of hot sauce if you like it extra spicy 🌶️.
