Potato Croquettes

500g potatoes, peeled and cut (2-3 medium potatoes)

50g mozzarella cheese (1/2 cup)

50g cornstarch (1/4 cup + 3 tbsps)

1/2 tbsp garlic powder

1/2 tsp red chilli powder

1/2 tsp black pepper

2 pinches salt (adjust to your taste)

1 tsp dried parsley

1 tbsp neutral oil (e.g sunflower, safflower)

160g plain flour/all purpose flour

1 egg

135g breadcrumbs (1 cup + 1/2 cup)

oil for frying

步驟

boil potatoes: peel and cut potatoes in quarters, before adding to a large pot with water. add around 3/4 tsp of salt and stir that in. boil the potatoes until they are fork tender. this should take around eight-ten minutes.

drain and cool: once the potatoes are done, drain them to remove any water. make sure there is no water left, then pat them dry to get rid of any excess moisture. set these aside to cool.

mash: once the potatoes have cooled, mash them using a potato masher or a big spoon until they become soft and creamy.

add extra ingredients: add garlic powder, red chilli powder, dried parsley and black pepper. add salt to your taste. then, add cheese and mix all of this into the mashed potato mixture. once this is all mixed in, add cornstarch and gently mix that in.

make a dough, then add oil: gently mix everything in with your hands until the potato mixture resembles a dough. add oil and gently mix that in to soften the mixture and make it easier to shape.

rest: let the mixture rest at room temperature for about 30 mins to make it easier to handle.

shape: separate the potato mixture into equal portions, before forming each piece into a cylinder shape. keep shaping until all of the mixture is finished and make sure there are no cracks and that you compact the potato mixture firmly so that there are no air pockets.

coat and dip: set out 3 wide, shallow bowls and fill one with flour, one with an egg, beaten, and one with breadcrumbs. coat your croquette in a thin layer of flour, then dip inside the egg, and then coat with a layer of breadcrumbs. repeat this until all of your croquettes have been coated in all three.

fry: add oil to a pot until it's a few inches deep, and heat it over medium heat. fry your potato croquettes for 2-3 minutes at medium heat. make sure to fry these in batches so as to not overcrowd the pan. they should be golden-brown and crispy when done. lift them out with a wire skimmer to drain any excess oil.

serve with your favourite dip, and let's eat!
