60g butter, softened

150g self-raising flour

1 teaspoon ground cinnamon

110g brown sugar

60ml maple syrup

2 eggs

80g coarsely chopped pecans or blackberries

85g coarsely grated apple

90g butter, softened

160g icing sugar

2 teaspoon maple syrup

Preheat oven to moderate, 180°C (160°C fan-forced). Line 6-hole texas or 12-hole standard muffin pan with paper cases.

Beat butter, flour, cinnamon, sugar, syrup and eggs in small bowl with electric mixer on low speed until ingredients are combined. Increase speed to medium, beat until mixture is changed to a paler colour.

Stir in nuts / blackberries and grated apple. Divide mixture among cases; smooth surface.

Bake large cakes about 35 minutes, small cakes about 25 minutes. Turn cakes onto wire rack to cool.

To make maple frosting, beat butter, sifted icing sugar and syrup in small bowl with electric mixer until light and fluffy.

Spread cakes with frosting.
