Blueberry Sour Cream Squares

Crumble

½ cup oil

½ cup sugar

1 ½ cups all purpose flour

Sour cream mixture

1 egg

¼ cup sugar

½ cup light sour cream or plain Greek yogurt

1 tbsp all purpose flour

Blueberry topping

2 cups fresh blueberries or frozen not thawed

¼ cup sugar

2 tbsp lemon juice

2 tsp cornstarch

步驟

Preheat oven to 350F. In a large bowl add oil, sugar and mix together.

Add flour and mix together just until crumbly. Use your fingers if needed.

Pat  ¾ of the mixture into 8”x8“ square pan sprayed with vegetable oil.

Sour cream mixture: in another bowl, add egg and sugar and mix. Add sour cream mix well. Add flour and mix until combined. Pour over crust.

Blueberry topping: add cornstarch, sugar and lemon juice and mix until combined. Scatter over sour cream topping.

Scatter remaining crumble over top and bake at 350 F for 55 minutes. Enjoy!
