Lemon-herb Shrimp Avocado Boats

The Boats
2 ripe avocados, halved and pitted
1/2 cup avocado flesh (scooped from the boats)
Shrimp
8 oz cooked shrimp, peeled, deveined, roughly chopped
Fresh Filling
1/2 cup cucumber, finely diced
2 tbsp red onion, very finely chopped
2 tbsp fresh parsley or dill, chopped
Creamy Lemon Dressing
2 tbsp sour cream or plain Greek yogurt
1 tbsp olive oil
1 tbsp fresh lemon juice
1/4 tsp garlic powder
Salt, to taste
Black pepper, to taste
Lemon wedges, for serving
How to Make It (Medium Steps)
1️⃣ Prep the boats
Cut avocados in half and remove pits.
Scoop out some flesh to make room, keeping the shells sturdy.
Roughly chop the scooped avocado.

Mix the filling
In a bowl, combine shrimp, chopped avocado, cucumber, onion, and herbs.
Dress gently
Stir sour cream (or yogurt), olive oil, lemon juice, garlic powder, salt, and pepper.
Pour over the shrimp mixture and fold gently so it stays chunky.
Fill the boats
Spoon the mixture back into the avocado halves.
Mound slightly for a pretty finish.
Serve fresh
Add a squeeze of lemon just before serving.
Enjoy right away while cool and creamy.
