剁椒蒸鱼 Chilli Steamed Fish (alt version)

Whole fish e.g. Barramundi or cod, or fillet
Marinade: 料酒, 白胡椒, Ginger slices. Salt if large pieces
Condiments: 剁椒, minced garlic, soy sauce
optional: 豆豉
Enoki mushroom, tofu, or 粉丝 as base
Spring onion to garnish
步驟
1. Marinade fish with 料酒, 白胡椒, ginger slices, 葱段, and salt. 15-30 mins
2. Prepare chilli topping - spray pan with oil, sautee 剁椒 and minced garlic until fragrant, add 2 tbsp soy sauce (ideally 蒸鱼豉油 if have on hand)
3. Steam fish for about 5 minutes and drain water (to get rid of 腥味). Prepare tray with any combination of enoki/tofu/粉丝, top with fish, and add chilli topping
4. Steam until cooked. Serve with garnished spring onion
