Smashed Crispy Feta Potatoes with Garlic Butter Drizzle

• 1 lb (450 g) baby potatoes, boiled until tender
• 2 tablespoons olive oil
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
• 6 oz feta cheese, crumbled
• 3 tablespoons butter, melted
• 2 cloves garlic, minced
• Chopped parsley or chives (optional garnish)

Boil baby potatoes in salted water for 15–20 minutes until fork-tender. Drain and let steam dry. <
