Lemon Drizzle Cake

for the full recipe deets, you’ll need:

250g soft unsalted butter

250g caster sugar

250g self-raising flour

zest of 3 lemons

4 eggs

100g icing sugar

juice of 1.5 lemons

步驟

begin by whisking the butter, flour, sugar, eggs and zest in a large bowl until thoroughly combined.

pop into a lined loaf tin and bake for 1hr at 180c. (check if it’s done by inserting a wooden skewer and it should come out clean)

whilst it’s baking, prepare the icing by mixing the sugar and lemon juice.

as soon as the cake is out of the oven, prick with a wooden skewer all over at different depths.

drizzle the lemony sugar all over and allow the cake to cool completely before removing.

once cool, place on a serving plate / board...

now enjoy a slice (or 2) with a cup of tea...🍋☕️
