Blueberry Peach and Pistachio Crumble

Here’s how

6 large peaches, poached for 1 minute in boiling water to peel off the skin and sliced

2 cups blueberries

1 lemon zested

3 tbsp cornstarch

1/3 cup sugar

步驟

Add all ingredients to a medium sized bowl and mix until combined

For the crumble

3/4 cup brown sugar

3/4 cup flour

3/4 cup rolled oats

2/3 cup pistachios, finely chopped

1 tsp ground cinnamon

135g butter, melted

Add all ingredients to a bowl and mix until combined and crumbles form. Add the peach and blueberry mixture to a baking dish, then evenly spread the crumble on top.

Bake for 30 minutes at 350°F, or until it turns golden and top crisps up. Serve with vanilla ice cream and fresh mint
