Mayonnaise Dressing Recipe

1 room temp egg yolk (but I always use a whole egg)
1/2 tsp salt
1 tsp Dijon mustard
1 lemon, juiced
1 cup avocado oil (or, if you must, a high-oleic cold-pressed organic sunflower oil)

1.) Combine all your ingredients and blend with a stick/immersion blender!
2.) Stays good for 4+ weeks in the fridge.
