Lemon Chicken & Potatoes

1 whole chicken cut into 8 pieces or 4 whole thighs

1 kilogram of potatoes

1 onion

3 cloves of garlic

8 small carrots or 2 large ones, chopped

Juice of 2 lemons and zest of 1

2 sprigs of rosemary

2 sprigs of thyme

2 sprigs of fresh oregano

150 ml olive oil

2 tablespoons of mild mustard

Salt and white pepper

Water just enough to cover the potatoes or chicken broth or water with 1 chicken cube

1 pinch of saffron

Season the chicken with salt and pepper. Heat the oil in a pot until hot, then sear the chicken on both sides until golden brown, and remove it from the pot.

In the same oil, add the onion and garlic and sauté for two minutes until they become translucent. Then add the carrots and potatoes and sauté for another two minutes. Add the rosemary, thyme, oregano, mustard, lemon zest, and stir for about a minute.

Place the chicken on top of the potatoes, add the broth or water, the lemon juice, mix saffron with some water and add in casserole, a little salt, and a little pepper. Cover with a damp parchment paper and the lid of the pot, and simmer for 50 minutes until everything is cooked and the sauce thickens.
